I love meatballs.  There, I said it.  Whether they’re made with beef, pork, a mixture, just pork… Italian-style, Vietnamese, Spanish… give them all to me.  I just love them and I love making them.

This recipe is my go-to.  I’ve pulled different ingredients and techniques from other recipes and made them my own.  I love them in a quick, easy red sauce, over pasta, with crusty bread, or by themselves broiled with some fresh mozzarella.  Salud!

MEATBALLS!

1 lb ground beef

1 lb ground pork

Kosher salt

2 teaspoons chili flake (more if ya like it spicy or you could add some Calabrian chiles 😋)

2 teaspoons fennel seed

2 eggs

1/2 cup sour cream

Half large yellow onion, grated or small yellow onion, grated (keep juice!)

Big bunch or 2/3 cup Italian parsley, chopped

1 cup Parm cheese, grated

1 cup plain breadcrumbs (I only use enough until mixture comes together)

Oil for frying OR I line mine up on a baking sheet and bake at 415 for about 20 min – wayyyy easier

 

Grate onion in a large bowl, add meat and spread out so you can season with salt. Add the rest of your ingredients leaving bread crumbs for the end, combine just until mixture comes together. Make a small patty and fry to test seasonings. Roll into balls and if baking, put on parchment lined baking sheet and drizzle with a touch of olive oil before baking.
