My favorite thing about summer coming to an end (besides the fact that it means fall is here!!!) is the bountiful late summer harvest.  Incredible tomatoes, peppers, and corn, corn, corn!  The only thing better than sweet summer corn is GRILLED sweet summer corn.  I’m pairing grilled corn with some of my favorite ingredients – jalapenos, avocado and cilantro.  This salad is incredibly easy to throw together and I absolutely love it with grilled steak, chicken or fish.  Warm up some tortillas and now we’re in business!

GRILLED CORN SALAD

3 ears of corn, cleaned

2 jalapenos

2 avocados, diced

1 clove of garlic, minced

1/2 of medium red onion, small diced

1 bunch of cilantro, chopped

Juice of 2 limes

1/4 – 1/3 cup olive oil, plus extra for grilling

Salt and pepper

On a baking sheet, rub ears of corn and jalapenos with olive oil, salt and pepper and then grill on a low part of your grill until jalapenos are soft and corn is lightly charred.

While veggies are grilling, chop up avocados, garlic, red onion, and cilantro and set aside.

Let corn and jalapenos chill slightly.  Chop jalapenos (discard seeds to keep heat down), and slice corn off the cob.  Combine corn, jalapenos, avocados, garlic, red onion and cilantro in large bowl.  Add olive oil and lime juice, stir and salt to taste.

Enjoy with grilled skirt or flank steak, chicken, fish, grilled veggies and warm tortillas.  Enjoy!
